About: Eggplants are beautiful purple fruits (but eaten as a vegetable so that is why it is in the vegetable section. They can be as big as your head, or as small as an egg! They can be eaten seasoned on their own or used in italian cooking like a lot of people like to use them.

- Helps reduce high cholesterol
- Helps with free radicals
- Use eggplant to make babaganoush!
- Use it as a vegetable dip or a sandwich filling!
- Eggplants have oxalates. If there is too much concentration of oxalates in body fluids they crystalize and cause issues. Anyone with an untreated kidney or a gallbladder issue should avoid eggplant.
